Star Shortbread Biscuits

Makes: 10+

Cooking time 10 minutes

Ingredients

125g butter
55g golden caster sugar
200g plain flour

For the icing

100g golden icing sugar
Juice of clementine
20g pistachio nuts, finely chopped.
Zest of a clementine

Method

  1. Place the butter, sugar and flour into a food processor and whiz until you have a texture that resembles breadcrumbs.
  2. Tip the dough into a bowl, add 1tbsp of cold water and knead to bring the dough together. Wrap in cling film and leave to chill in the fridge.
  3. Pre-heat your oven to 200*c Fan 180*c gas 6
    Lightly flour the work surface and roll the dough out to roughly ½ cm in thickness.
  4. Use a star shaped cutter to stamp out stars.
  5. Using a palette knife carefully lift the stars and place onto a baking tray lined with parchment paper. Cook for about 10 minutes until light golden.
  6. Leave to cool for 5 minutes before placing onto a wire rack to cool completely.
  7. For the icing, simply mix the icing sugar with a little clementine juice.
  8. Spread the icing all over the biscuit, then top with pistachio and clementine zest.
